Salmon with farro, asparagus & lemon yogurt.

This is the kind of dinner I make when I want something fresh and satisfying without turning the whole evening into a project. Crispy salmon, creamy lemon yogurt, and plenty of texture make a simple plate feel special.

Ingredients / serves 4

  • 1 lbwild salmon fillet, portioned
  • 1 cupcooked farro
  • 1 bunchasparagus, trimmed
  • 1 lemon, halved
  • 2 Tbspextra-virgin olive oil
  • ½ cupplain whole-milk yogurt
  • 1 handfultender herbs, roughly torn
  • sea salt and black pepper

Method

  1. 01Warm the farro with a splash of water and a pinch of salt. Cover and keep warm.
  2. 02Heat a cast-iron skillet over medium-high. Coat the salmon and asparagus with olive oil, then season generously.
  3. 03Sear the salmon skin-side down until the skin is crisp. Add the asparagus and cook until charred-tender. Turn the salmon briefly to finish.
  4. 04Stir the yogurt with lemon juice, zest, salt, and pepper. Spoon farro into bowls, then add salmon, asparagus, yogurt, herbs, and a final squeeze of lemon.
